What is the difference between digital and offset can printing?
Offset printing presses your artwork onto cans using metal plates, one per colour. Making those plates costs money and takes time, so the print run has to be long enough to justify them. Digital printing sprays ink straight onto the can from a file. No plates, so no setup cost and no long run to absorb it.
That is the whole difference. Everything else follows from it.
The plate is the reason for the minimum
A set of offset plates has to be made before a single can is printed. Published setup charges run from the high hundreds per design for standard artwork into the low thousands for specialty effects. That is a fixed cost that lands whether you print 50,000 cans or 500,000.
Divide a typical plate set across 500,000 cans and it disappears into fractions of a cent. Divide the same set across 5,000 and it can add more than ten cents a can before a drop of ink is used. So offset does not really have a minimum order. It has a point below which the maths stops working, and converters set their minimums there.
Those minimums are not secret. In North America the common floor is a full truckload. Published UK figures sit around 150,000 cans. When a supplier manages to get that down to a single truckload it makes the trade press, which tells you where the bar normally sits.
What that costs you beyond the money
The plate is also a commitment. Change the artwork and you buy new plates. So a seasonal, a limited edition, a recipe tweak that changes the ingredient panel, or a regional variant each carry a setup charge and a fresh minimum.
The practical result is that brands on offset batch their decisions. You launch fewer SKUs, you commit further ahead, and you order more than you need so you do not have to go back. Warehoused cans that never sold are the most common form of this cost, and they rarely appear in the packaging line of a budget, because by the time they are written off they look like an inventory problem.
What digital costs instead
Digital removes the plate and the setup fee. What you pay for is a higher price per can.
Of the suppliers who publish a rate at all, and most do not, per-can prices sit broadly in the high twenties to mid thirties of a cent, varying with size and volume. Treat any figure you find as a starting point and get a real quote.
Against offset at high volume that is a premium. Against offset at low volume, once the plate cost is amortised over a short run, digital is usually cheaper. That crossover is the number that actually matters when you are choosing.
Digital's real constraint is throughput, not cost. A digital line prints a can at a time. Offset lines run faster. At very high annual volume offset still wins on both cost and speed, which is why the format has not gone anywhere.

Where the line actually falls
There is no universal crossover number, because it moves with your run length, your design count and what your converter charges for plates. The honest way to work it out is to take a real quote from each and divide.
The rule of thumb most brands land on: if you run one design, the artwork does not change, and you are buying by the truckload, offset is the cheaper answer and you should take it. If you run more than a handful of SKUs, change artwork within a year, or want to test something before committing inventory to it, the plate is the thing costing you money, and digital removes it.
Plenty of brands end up running both. Core lines on offset, everything else digital. Those are not competing technologies so much as different answers to how certain you are about what you are printing.
